Winter to Spring

We haven't had a stellar snow season this year, but that didn't stop us from going skiing! I have not been skiing in....10 years at least. I took lessons when I was younger but that was the last time I ventured onto the slopes. C, P, A, and I all took a Saturday night and went night skiing up at Sundance. It took me a while to get used to the ski's again, and I am definitely NOT good at it, but the more I practiced, the more fun it became. Overall, it was a fun night. We had good weather, and it was fun!

Pi day! Had to celebrate, of course, since I LOVE pie. This year, I made mini chocolate cream pies in these cute blue ramekins I got a while ago. They turned out really yummy! I love pi day...


C and I had a fun little beauty night. She bought a fun new purple nail polish. Its the color of the season! Very cute, and very spring-ish. C found an idea online on how to do newspaper nails. Basically you paint your nails, and then transfer writing from a newspaper onto the nail. Looks kinda cool, VERY different than what I am used to that's for sure! I think that C liked it more than I did....but it still turned out kinda cool.




For St. Patrick's day, I made corned beef and potatoes. I had leftovers, so I was inspired by PJ to make homemade hash. Have to say, it turned out rather well! I was quite surprised with how much I liked it!

Yesterday was the first day of Spring, and I can tell! Outside it is so nice! I think we are supposed to get into the 70's this week, awesome! And, since Easter is just around the corner, it was time to put away the St. Patrick's Day decor and put up the Easter stuff!! I found this banner I had made last year in my decoration box. Love it!

February

Time to catch up on February. Overall, pretty good month. Went pretty fast, but had some fun times. I was able to attend a BYU men's vollyball game on campus. They didn't end up winning, but it was a really exciting game. Its been a while since I have been to one of their games, and I remembered why I enjoy them. Lots of fun and man, those guys are good and can jump high!


The week after Valentine's Day, I got to go to a Jazz basketball game up in Salt Lake. I had never been before, and really wanted to just for the experience. I loved it! The stadium was HUGE, and very loud. I have been to a ton of high school and college basketball games, but this was my first time at an NBA game. It was a really cool experience! These guys are good, they were shooting 3 pointers like it was nothing. Definitely made the game fun! They were ahead the entire game until the last minute, and couldnt hold the other team off. Even though they didn't win, it was still really fun to go and see a professional game!


I got to go up and play with J for a few days. We had lots of fun playing with cars, and the kitchen, and the tools and reading books, and just playing. He is becoming quite a talker, and its alot of fun to pretend with him. We have a great time!!


I had just woken up, and J decided to come kick me out of my bed. Here he is, taking it over, all snuggled up!

C decided to make bread, and that inspired me to make bread for myself as well. I just did a regular white bread recipe, but it turned out really yummy! Fresh hot bread out of the oven. It was awesome. I think I am going to make some more, this time honey whole wheat. Turned out very pretty, don't ya think?

All over on line, I have been seeing recipes for green smoothies (basically smoothies with spinach in them to make them a little healthier). I have really been wanting to try it, and today was the day. I had a bunch of frozen tropical fruit (pineapple, strawberry, papaya, mango), combined that with plain yogurt, a tiny bit of lemon juice, and some spinach. It actually turned out really yummy, and I couldn't taste the spinach at all. Definitely will be trying this one again! It looks kinda iffy, but tasted really good.

I have been searching for new ideas for lunches for work. Found a recipe online for apricot oatmeal bars and decided to try them out. They went together really quickly, and look pretty good. I think next time I will put in a bit more apricots, as that was my favorite part. I splurged and decided to try putting chocolate chips in half of the recipe. Pretty tasty, but the half without the chocolate chips was just as good. Worked pretty yummy and I am excited to have something new to take for lunch.

Can't believe that February is over with already! We got our first really big storm of the winter a day or two ago (March, isn't that great?!). It was fun to watch it finally snow. I realize I been missing it! Work is good, very busy and picking up more and more as we get closer to the end. Hopefully I can just hang on for the ride!!
